Sukhi Bharwa Bhindi
Ingredients:
·
500gms Lady Finger/Bhindi
·
2-4 Dried Red Chilies
·
1 Cup groundnut
·
5-6 tbsp. Oil.
·
1 tsp Aniseed/sauf
·
2 tsp Dry Mango Powder
·
1 tsp Black Pepper crushed
·
Salt to taste.
·
2 tsp Coriander powder
·
1 tsp ginger-garlic Paste
·
2 tsp Jeera Powder.
·
1 tsp Turmeric Powder
·
1 tsp Red Chili Powder.
·
1 tsp preferred Maharashtrian Goda Masala
·
2-3 pinch of sugar.
·
2-3 pinch white sesame seeds.
Pre-Requisites:
·
Roast the
groundnut, Peel and crushed, keep it aside.
· Roast Coriander powder, Jeera Powder and Red
Chili Powder on shallow pan/tawa for a min till it leaves aroma.
·
Bharwa Masala – Mix Crushed groundnut,
Dry Mango Powder, salt, Turmeric Powder, Black Pepper crushed, Maharashtrian Goda Masala and above
mentioned roasted masala. Mix well and keep it aside.

Wash the Lady Fingers, wipe it. Cut
the head and its tail. Cut into two portions, and slit horizontally to fill the
Bharwa masala.
·
Fill the Bharwa Masala into the Lady
Finger and keep it aside.
Method
1.
Heat adequate amount of oil/ghee in a
pan.
2.
Add Aniseed/sauf, Dried
Red Chilies and ginger-garlic paste Sauté for a
min or two.
3.
Add the kept ready and filled Lady
Finger/Bhindi.
4.
Sauté for a min and add sugar.
5.
Mix well in a way the Lady Finger’s
shape should not get distorted.
6.
Cook with closed lid for 3mins.
7.
Open the lid and cook for another 3-4
mins so that the preparation should not contain any vapour or water content
8.
Serve hot and garnish with sprinkled
white sesame.
