Chicken ZanZznie
Ingredients:
• 500gms Chicken
• 4 Onions medium size.
• 2 Tomatoes (puree)
• 2 Pinches of sugar
• 10 tbsp Mustard Oil.
• 6-8 Green chilies..
• 5 tsp Coconut grinded
• 1 tsp Garam masala.
• Fresh coriander leaves .
• 1 tsp ginger-garlic Paste
• 8 Garlic cloves.
• 1 inch fresh Ginger.
• 1 Lemon juice.
• 2-3 Red Chilly (dried).
• 2-3 tsp poppy seeds (Khus Khus).
• 2 tsp Coriander seeds (whole)
• 2 tsp red chilly powder.
• 2 tsp Turmeric powder
• 1 tsp cumin seeds.
• 1 tsp sesame seeds.
• Salt to taste.
Pre-Requisites:
• Clean the chicken for marinating.
• Place the chicken in a bowl and add the ingredients 1 tbsp oil, 1 tsp turmeric, 1 tsp red chilly powder, 1 tsp salt, 1 tsp ginger-garlic paste and lime juice mix them well to marinate for 1 hour.
• Roasted Masala : Roast (no oil) the mentioned whole seed and spices on flat pan/Tawa i.e; Dried red chilies, poppy seeds, coriander seeds, sesame seeds and cumin seeds till that fills up the spicy aroma. Allow it to cool. Once it is normal in temperature grind it to make a powder.
• Chop 2 onions and keep it aside.
• Fresh Masala : Grind remaining 2 onions, fresh ginger-garlic, small amount of coriander leaves and green chillies. Make a paste and keep it aside.
Method
1. Heat the oil in a pan.
2. Add fresh masala paste. Sauté till it turns pinkish and add 2 pinch of sugar. Now add the remaining chopped onions and sauté till the whole mixture leaves aroma and turns golden.
3. Add turmeric powder, chilly powder, garam masala, salt and Sauté for 2mins.
4. Add grinded coconut and roasted masala. Sauté for another 2mins
5. Add the tomato puree stir well so that there is no formation of lumps in the masala/spices. Sauté till it leaves the oil.
6. Add marinated chicken and mix well with all the spices; Sauté (no lid/cover) for 5-7mins.
7. Cook another 10 mins with no lid/cover.
8. Add 1 cup of water and cook another 10 mins with covered lid.
9. Add some chopped fresh coriander leaves and cover the lid for 2mins on medium flame.
10.Serve hot with fulkas/naans/chappatis.
